Vegan tacos are a staple in our house and we have 2 easy vegan fillings you’re going to love.
The BBQ red lentils are amazing, the flavors are big and smoky and the texture has this wonderful bite that’s creamy and yet meaty.
We also have the Baja Taco that is out of this world. I love how easy it is to make. Simply dry the hearts of palm, season, whip up the batter, and pan-fry, that’s it. You have Baja tacos ready to rock. Add the chili lime mayo to the slaw to really amp up the flavor.
You can make the individual elements for these tacos ahead of time and then assemble them for dinner to save some time. The Baja tacos are best made fresh but everything else can be prepared before.

Baja Hearts of Palm Tacos

Ingredients
Heart Of Palm
- 1 can Hearts of Palm
- 1 tsp Kelp Granules
- 1 Zest of Lime
Beer Batter
- ½ cup Flour All-Purpose
- ¾ cup Beer (sub soda water for non-alcholic option)
- 1 Tbsp Old Bay Seasoning
- 1 tsp Smoked Paprika
- ¼ tsp Baking Powder
- ½ tsp Kosher Salt
Chili Lime Slaw
- ¼ cup Chili Lime Mayo See Recipe
- ¼ head Green Cabbage shredded
- ¼ cup Scallions sliced thinly
- ¼ cup Radish julienne cut
Garnish
- Pickled Red Onion See Recipe
- Cilantro chopped
Instructions
How to Make the Perfect Beer Batter
- Combine the flour, spice, salt, and baking powder. Stir to combine the dry ingredients.
- Add ¾ cup of beer to the dry ingredients. The batter should be thick enough to coat the hearts of palm, it needs to be just right, too thin and the batter does not fry up to create a crispy bite, too thick and the batter becomes dough-like.
How to make Vegan Baja Tacos
- Drain the hearts of palm and cut lengthwise. Place the cut hearts of palm onto 2 paper towels, place another 2 paper towels on top of the hearts of palm and gently press down on the heart of palms to flatten a little. Season the hearts of palm with the lime zest and kelp granules. Place on a baking sheet with fresh paper towels.
- Heat 3 Tbsp oil in a heavy pan. Coat the hearts of palm with the batter, place in the pan cooking until a beautiful golden brown, flip, cooking the other side until crisp and golden brown. Place on a drain rack.
Chili Lime Slaw
- Start by slicing the radish into thin discs, stack the disc and slice the stack into thin matchstick size.
- Combine the shredded cabbage, scallion, and radish in a bowl. Add the chili lime mayo, stir to combine, adjust the slaw with salt and more lime to taste. You can also add extra spice if you want it to have some kick.

Ingredients
BBQ LENTILS
- 1 cup Red Split Lentils
- ½ Yellow Onion diced
- 1 Tbsp Oregano
- 1 tbsp Smoked Paprika
- 1 tsp Cumin ground
- 1 cup BBQ Sauce
- 1 Tbsp Olive Oil
Spicy Guacamole
- 2 Avocados
- 1 Lime zest and juice
- ½ Serrano Pepper
- ¼ tsp Granulated Garlic
- ¼ Kosher Salt
- Cilantro rough chopped
Instructions
How to Make BBQ Red Lentils
- Rinse the lentils.
- Place the lentils in a pot of salted boiling water for 6 minutes. Drain and rinse under cold water. Allow the lentils to continue to drain while cooking step 3.
- Heat a heavy sauté pan over medium heat, add 1 Tbsp of olive oil to the pan, add the diced onion, cooking until crispy on the edges.
- Add the cumin, oregano, and smoked paprika to the onions, continue to cook for 2 minutes, lightly toasting the spices.
- Add the BBQ sauce to the pan along with the cooked lentils. Stir to combine, place in the oven cooking for 30 minutes.
How to Make Spicy Guacamole
- Remove the seeds from the Serrano peppers, you can use more or less depending on how spicey you want to make it. Mince the pepper.
- Place the peppers, avocados, salt, granulated garlic in a bowl. Using a Microplane grater to zest the lime into the bowl. Juice half of the lime and add to the bowl. Mash the avocados until smooth. Adjust the seasoning with salt and lime juice. Garnish with Cilantro.
