Place the lentils in a pot of salted boiling water for 6 minutes. Drain and rinse under cold water. Allow the lentils to continue to drain while cooking step 3.
Heat a heavy sauté pan over medium heat, add 1 Tbsp of olive oil to the pan, add the diced onion, cooking until crispy on the edges.
Add the cumin, oregano, and smoked paprika to the onions, continue to cook for 2 minutes, lightly toasting the spices.
Add the BBQ sauce to the pan along with the cooked lentils. Stir to combine, place in the oven cooking for 30 minutes.
How to Make Spicy Guacamole
Remove the seeds from the Serrano peppers, you can use more or less depending on how spicey you want to make it. Mince the pepper.
Place the peppers, avocados, salt, granulated garlic in a bowl. Using a Microplane grater to zest the lime into the bowl. Juice half of the lime and add to the bowl. Mash the avocados until smooth. Adjust the seasoning with salt and lime juice. Garnish with Cilantro.
