WHAT YOU NEED...
Great Northern Beans: We used the Great Northern Bean due to the delicate flavor. They really take on whatever herb or spice you use with it. They also retain their integrity while still getting creamy when cooked.
Red Onion: add a robust element to the otherwise delicate flavors of the beans.
Garlic cloves: You can use more or less garlic as your platte desires. The 4 cloves we use in the recipe were spot on for me.
Fresh Thyme: I love the herbaceousness that the thyme brings. You can swap fresh Oregano if you can't find Thyme.
Plant Milk: We use oat milk, because that's what we have in the house. You can use whatever plant milk you like or have.
How To Make Braised White Beans
Red onion, garlic, fresh thyme and great northern beans shown here. Sweat the onions and garlic until translucent.
Next you will add the thyme sprigs followed by the beans and plant milk.
Cook for 15 minutes and remove the thyme sprigs before serving
We used canned Great Northern beans but you could use other white beans like Cannellini or Butterbeans. If you want to use dried beans you can use a pressure cooker to cook them fast otherwise it would be anywhere from 80 - 120 minutes to cook.
Red onion is not a requirement for this recipe, swapping for yellow onion or even a leek would be great.

How to Make Stewed White Beans
- Heat a pot of medium-high heat, and add the extra virgin olive oil. Add the thinly sliced garlic and sliced red onion. Cook the onions and garlic for 5 minutes.
- Add the beans. Stir to combine, and season with the kosher salt and the plant milk. Reduce the heat to low and simmer.
- Cooking for 15 minutes. If too much of the plant milk evaporates, add a dash more just before serving.
