Red wine is not the only thing that improves with age. It's hard to believe that a toffee chocolate chip cookie gets better and better with time. If you think about it, the flour and fat are absorbing the flavors, the gluten in the flour is relaxing, and all of these small details add up to creating an aged chocolate chip cookie that is complex and, simply put, delicious.
To understand why I love making these cookies, you must understand the traditional way of creaming the butter and sugar takes time and special equipment. With this recipe, we skip that step. Melt the butter, mix it with the sugar, then add the flour. That’s it. They’re so much easier, faster, and straightforward.
And because it’s so fast and simple we have more than enough time to age the cookies for 48 hours.
I must emphasize that it really is worth taking the time to age the cookies. To test the recipe, I ate a cookie right after I made the dough and it did taste great. I decide to cook another cookie the next day 24 hours later to see if I could tell the difference and guess what I could. The cookie tasted so much better, the flavors were starting to meld together. I was very surprised by the difference between the two cookies, I was very excited to see what the 48-hour chocolate chip cookie would taste like. I found that the 48-hour chocolate chip cookie had this very delicate balance between all of the flavors, the sweetness, and the richness that flowed nicely with everything in balance.
Sometimes a cookie can have a huge amount of one flavor that overpowers the other flavors, with this cookie recipe, we get all of the ingredients working together to build a perfectly balanced bite. It is the little things like the espresso and vanilla paste that highlight flavors in the chocolate. I think you’re going to love it!
